Shrimp Casserole ( Karides Guvec )
Ingredients (2 Servings) – 50 minutes
½ kg Shrimps
2 bay leaves
1 tablespoon oil
1 tablespoon vinegar
1 tablespoonbutter
2 tomatoes
4 peppers
10 cloves garlic
Directions / How to cook Shrimp Casserole ( Karides Guvec ) ?
* You can either use frozen shrimps or cleaned fresh shrimps
* Gently heat a large frypan and put the shrimps into pan, Shrimps will start to leave their juice, pour 1 tablespoon vinegar over it.
* When the shrimps juice start to boil, turn shrimps up and down several times in 4-5 minutes. ( Be careful not to crumble them when turning )
* Take the cooked shrimps via a strainer to traditional Casserole clay hot pot ( Guvec )
* Chop the peppers and garlics
* Take 1 tbsp butter and 1 tbsp oil to fry pan, heat the frypan and ad chopped peppers and garlics, stir untill the peppers turn into a yellowish colour
* Peel the tomatoes, chop them in smal cube shapes and add them to frypan, keep cooking all for more 10 minutes
* Add the shrimps to frypan after 10 minutes and cook 2-3 more minutes,
* Turn off the fire, put the mixture in the frypan to clay casserole pots ( Guvec )
* put a half bay leaf over the mixture and sprinkle some grated kasseri cheese ( Cheddar cheese )
* Pre heat oven to 180 C. , place the pots to the oven, bake them for 15 minutes untill the cheeses are browned.
* Shrimp Casserole ( Karides güvec ) is ready !
